    Late lunch today.
    I usually use the boxed mix from Germany for potato pancakes, but I made them from scratch today. I was hoping Alf would like the mix better.......but he liked these more!
    Served with applesauce and sour cream. I love this sour’s soupy and a little salty, so it’s perfect for these pancakes!
    For what is in the picture for the two of us I used 3 medium Yukon Gold potatoes, but you can use russet ones too. After shredding I wrung them out in a tea towel. I just used half of a big white onion, 3 T. flour ( some recipes don’t call for flour) 1egg, salt and pepper.

    5 medium potatoes peeled and shredded and squeeze as much liquid as you can out of it , mix with one egg, 1/3 cup of flour, chopped green onions and salt & pepper , scoop about 1/4 cup of the mixture in frying pan with little oil , pan fry about 3 minutes each side , this’s a basic recipe but you can do your own variations
