    Thanksgiving cooking has begun! I hate buying chicken broth or stock. We buy rotisserie chicken a lot (working mom here!) so I save the carcasses to make stock in the instant pot.

    • 2 chicken carcasses
    • 2 celery stalks
    • 1 carrot
    • onion - whatever you have leftover
    • 1 tbsp salt
    • 1 tbsp black peppercorns
    • 4-5 sprigs of thyme
    • a little bit of garlic powder

    Fill your pressure cooker with enough water to hit the max fill line. Hit the broth button or pressure cook for 45 minutes and strain into jars. It makes the equivalent of 3 boxes of stock basically for the price of the herbs and spices since the rest of the stuff would be wilting away in my fridge or in the trash.
